Chef Irina Kolosov

For Irina Kolosov, happiness is cooking pasta and it’s apparent in her role as Chef, Parma 8200. A graduate of The Art Institute International Minnesota, Kolosov grew up watching and observing her mother in the kitchen. Her mother’s passion for delicious and creative food inspired her to pursue a career in the culinary industry. While completing an internship at Palomino, Chef Adam Kind invited her to join the D’Amico Family at Cafe and Bar Lurcat. Four years later Chef Mike Dalton invited her to help open Parma 8200 and quickly she realized creating Italian food is where her heart belongs.

Parma Cocktails

The Parma 8200 cocktail program focuses on classic Italian and American recipes with a twist in the ingredients that are used: a classic Negroni with lemon peel infused Campari, smoked sugar and bourbon barrel honey make for an amazing Old Fashioned-style drink, a ‘simple’ margarita recipe utilizing a Campanian liqueur infused with saffron called Strega, and sparkling liqueurs from Veneto to create a choice of flavoured Bellinis (peach or blood orange) are examples of libations that Bar Manager Emily Traxler has created to appeal to an array of guests who visit Parma.

Parma Wines

The wine program is comprised of primarily Italian and California selections from a variety of appellations and regions with a smattering of Washington and Oregon and has 21 BTG options ranging from traditional Italian varietals to pair with specific dishes to standard California wines for those who like to stick to domestic wines. On the bottle selection, wines are divided up into categories based on the wine’s flavour profile to aid the guest in choosing something they are familiar with, like a Pinot Grigio or Cabernet Sauvignon, or something they have never tried before, like a Vernaccia or Valpolicella Ripasso. The list as a whole offers wines at a range of price points from $36-$250 with many options in between.
